We small-batch cure and gently smoke our pork. Specifically, we craft our authentic Ossabaw Island Hog Canadian back bacon from rare heritage pigs left behind by Spanish explorers over 500 years ago. Because they were isolated on a barrier island, these hogs developed a unique ability to store prized monounsaturated fat. Consequently, this creates a distinct, melt-in-your-mouth texture.
We raise our pigs outdoors on the Alberta prairies. They eat a quality, corn-free, soy-free diet made with local grains. We use a local, provincially inspected Alberta abattoir processes all our meats to bring you our world-class Ossabaw Island Hog Canadian back bacon.
