We have heritage breed-specific pork available for our 2024 season. Each breed offers unique characteristics, adding nuances to your pork dishes and bringing delectable pork to your plate.

Ossabaw Island Hog Pork – AVAILABLE

The meat from an Ossabaw Island Hog is genuinely unique. Their fat boasts high amounts of fatty acids, omega 3s, and unsaturated fat. There is a high amount of oleic acid in their meat and fat, also predominantly found in olives. Their fat nearly turns to liquid and melts at room temperature because of how unsaturated it is. Many believe the Ossabaw Island Hog strongly resembles the famous Iberian Hog.

English Large Black Pork – AVAILABLE

The English Large Black offers succulent, superb taste and eating quality. Considered a “bacon” breed, as a result, it has a higher meat-to-fat ratio with a tender and firm texture. In addition, Large Black meat has some of the best micro-marbling, which creates a juicy quality that people enjoy.

Meishan Pork -AVAILABLE

The lean meat-to-lard ratio on a Meishan averages 50-50. Packing excellent marbling means flavour and exquisite taste. Japan considers Meishan meat a delicacy, and it regularly appears on menus in top-class restaurants. The Meishan is ideal for you if you have a progressive pallet. Their pork has been the choice of Emperors for 5000 years, and they are believed to be the oldest domesticated swine breed.

Mangalitsa Pork – AVAILABLE

They are considered among the tastiest pork in the world! The Mangalitsa meat offers reddish meat, high marbling with creamy white fat, and is high in omega-3 fatty acids. Mangalitsa lard is lighter and much brighter than the lard from other breeds of pigs. In addition, it melts at a lower temperature because of its higher content of unsaturated fat. All this extra fat allows their cured pork products to dry much longer, creating a more profound flavour without losing moisture.

Red Wattle Pork – AVAILABLE SUMMER 2024

Flavourful, well-marbled meat that many say is comparable to beef. The Red Wattles are excellently suited for bacon. The other cuts beyond bacon are incredibly tender, juicy, flavourful, and lean. So if you prefer less fat on your pork, this is the breed for you!
